Here in Hawaii we make poke' which is our version of cerviche. First thaw the octopus, then wash using course rock or sea salt to remove the

slime. Use a large bowl for this procedure. You "Lomi" or massage the octopus till the brown slime comes off, then rinse in water. Place in boiling water to cover (I like to add a can of beer to the water). If you like firm meat, cook for about ten minutes, if you want it tender, cook for at least 20 minutes, half hour is better. Octopus is a funny food. It start out soft, gets firm, then very tough, then tender. After cooking, slice up and use any cerviche recipe. As you know octopus is very delicious if prepared right.
